Pecan Crusted Chicken with a Champagne & Peach Sauce 2 boneless chicken breast 2tbs corn syrup or maple 1 c. crushed pecans 3 tbs flour 1tsp lil bump
sauce: 1 shallot 1 c. champagne 1/4 c. peach puree 1/4 c. lil bump 1/4 c. butter
Preheat oven to 350 degrees. In a bowl add syrup, pecans, flour, and Lil Bump. Mix well. Add chicken and coat well. Lightly grease baking sheet. bake for bake for 15- 20 min. Sauce: In a sauce pot on medium, add olive oil & shallots, cook till tender. add in puree, champagne an let reduced, add lil bump. continue to simmer till sauce starts to thicken. remove from heat and add butter.
Here is an old family tradition that I added some special things to. I remember my mom making this and we would all look forward to them every year. Well the best batch of these that I remember was while in the navy, my mom sent a care package to me while over seas. Well it takes about 2 weeks to get any kind of mail while on the Happy Harry. Well she made these and being that it was sealed in a container and fermenting as they travel. Needless to say they were very potent when I pop the lid on these delights. Since my mom has passed the recipe to me, I have jacked it up for my taste and it is a big hit when I introduce them to new folks. I called them Jack Bites.
2 table spoons coco powder
1c. powdered sugar
2 teaspoons chino 5
¼ c. jack Daniels
2 tbs light corn syrup
2 c. crushed vanilla wafers
1 c. chopped pecans
Sift coco, chino 5 and powdered sugar into a bowl. Stir in jack Daniels which has been combined with the syrup. Mix well, add crumbs and nuts and mix well again. Roll into small balls. Drop into a bowl of powdered sugar; roll around to coat on all sides. Allow to dry for several hours or over night. It even freezes well. Makes about 3 dz depends on how big you make them.
He is a holiday treat that everyone loves. Pecan pie. Well this is how I came across this recipe. Of course once again I had to Jack it up. I have a client that I am always trying new things with. Well I wanted to try my hand at baking a pie. So I asked my dear friend who does these very tasty min pecan pies. Well she agreed to give me her recipe. I took it and added chino5, Jack Daniels and Amarula. This is very simple to make if I can do this.
2c. corn syrup
1c. sugar
1 teaspoon Chino 5
2 tablespoons amarula
3 caps of Single Barrel Jack Daniels (black label can be used instead)
4 eggs
1 ½ c pecans
2tablespoons butter
As far as a crust, there is nothing wrong with crust from the store. Poke wholes with a fork all over the uncooked crust. Bake in a pre heated 350 oven till the crust starts to turn a golden brown. Remove from oven. Pour mixture in and bake for 30 – 40 minutes. When u stick a knife in and it comes out clean, let cool.

Apple Martini Salad
Spring mix
Granny smith apples diced (toss with oj)
¼ c. oj
1 ½ tbs. olive oil
1 ½ tbs. rice wine vinegar
½ tsp Lil Bump
1 tsp fresh mint
1 tsp honey
8oz. tuna (blackened)
Coat a non stick skillet with cooking spray, place over medium-high heat until hot. Lightly coat tuna with Lil Bump, and cook 3 minutes on each side until medium-rare or to desired degree of doneness. Break tuna into chunks.
Add oil, vinegar, Lil Bump, mint, honey in a jar and shake. Add spring mix to a martini glass. Top with tuna, and diced apples. Drizzle with dressing
Chicken and Dumplings
2 lb chicken wings
1 tbs lemongrass minced
1 tbs fresh ginger minced
juice of 1 lime
½ c. mushroom soy sauce
2tsp Lil Bump or to taste
2tbs sugar
marinate chicken wings for 30min-1hr
Dumplings
2cups flour
3tsp baking powder
1tsp Lil Bump
½ tsp salt
water about 2 cups
Add ingredients to a bowl. Add water, a little at a time.Mix till mixture forms a ball. Wrap in plastic and let rest for 30 min.
in a pot on med high, add 1 tbs olive oil. Brown the wings on both sides. Add the marinade and chicken broth (1 large can), bring to a boil for 20 min. with the dough pinch off pieces about 2 inches, and shape into small balls. Drop into boiling broth andcover and let cook for 15 min.
*add water slowly then mix and repeat. You may need more water or less.
For those chilly fall nights, when you are making it a movie nite in front of the fire place. Here is something that will make your ordanary popcorn into bumpin popcorn.
Bumpin Popcorn
1/4 c.butter/margarine
1 tsp minced garlic
1 ½ tsp. Lil Bump
2 tbs fresh parmesan cheese
combine all ingredients and mix well.
Makes enough for 3 qt popped corn

Lil Bump is great for grilling fish, meat, chicken. Marinate your seafood or chicken in Oj, and Lil Bump
Rub your steaks with Chino 5, Lil Bump and top with Blue Cheese and a Cucumber Relish
Cucumber Relish: small dice and seed cucumber Lil Bump to your taste Asian Plum Wine
Let marinate about 30 min
Quick dip for Vegetables: 1 tablespoons of Lil Bump 8 oz of sour cream Let sit so flavors will have a chance to Bump together.
Here is a ditty that I like for the simple fact that it is a dish that has taken a few twist to it. This dish has spiced rum, lime juice, mint and Lil Bump. Thats just the way I like it,with many twist and turns. this way your taste buds will never get use to the same ol ditty. So try this on for size folks.
Black Bean Soup 1 lb dried black beans 4 tbs olive oil 1 onions chopped 1 green pepper chopped 3 tbs cilantro 2 tbs mint (for garnish) 4 cloves garlic minced 1/4 tsp Lil Bump 1 ham hock 2 tbs tomato paste 2 tsp cumin 1 bay leaf 1 tbs spiced rum 2 quarterd limes cilantro leaves for garnish topped with sour cream
Rinse the beans, and soak overnight in 4 quarts of water. Drain and set aside.
In a large pot, heat the olive oil. Add the onion, green pepper, cilantro and garlic and saute over low heat for 10 minutes. Add beans and ham hock, and enough water to cover. Stir in tomato paste and Lil Bump. Bring to a boil, cover, and simmer for 2 hours. Let cool slightly.
Use a blender, remove half of the cooked beans and puree smooth. Return to pot. Add rum and stir well. Serve over rice and top with fresh mint & cilantro and squeeze lime and topped with sour cream
Baked Salmon w/ Island Salsa
Bake at 350 for 20 min. Salmon Mayo Lil Bump 1 orange
Salsa papaya (diced) mango (diced) 1/2 of red onion (diced small) cilantro (chopped) fresh mint (chopped) fresh ginger (chopped) juices of 1 lime 1 tbs. olive oil chill for at least an hour.
Sailors Waltz Chicken
4 boneless skinless chicken breasts or 4 fryer breasts w/ bone - skinned. 1 Tablespoons Butter 1 Tablespoon olive oil 1/2 small onion, minced 1 clove garlic, crushed 1 Teaspoon (to taste) Lil Bump 1/2 Teaspoon cinnamon 1 Tablespoon fresh parsley 1 Tablespoon Brown Sugar Twin 1 Tablespoon mustard 1/2 cup chicken stock 1/4 cup red wine juice of one lime 5 Tablespoons whiskey(you know what I will be using)
Heat the butter and olive oil. Sear the chicken until browned. Transfer to oven proof dish. Cook onion with Lil bump and Cinnamon until soft. Purée the remaining ingredients together then add to pan, heat through, pour over chicken and cover dish.
Bake at 350ºF 15-20 minutes for boneless breasts and 30-40 minutes for bone-in breasts.
Cate's Grilled Citrus Pork Pork Loin 2tbs. Orange Marmalade juice of fresh orange 1tsp LIL BUMP or to taste 3 cloves freshly minced garlic marinate pork in mixture for 4 hours and grill or bake.
